Meal Plan

This week I plan on making a few tried and tested meals plus a recipe I have never tried before.

Today is Tuesday and we had duck legs in plum sauce, rice and veg; tender stem broccoli, asparagus and green beans. Our appetites are slowly returning after being unwell but we are still eating relatively simple foods.
On Wednesday I plan on making a chicken and broccoli pie with homemade puff pastry. Again, this depends on our appetite. I will adapt it to be much simpler if necessary. If Lily would like to, she can help make the pastry with me. For the last few pies I have followed Paul Hollywood's pastry method from his Buffalo pie recipe. It is excellent and I feel rather proud once it has cooked, showing off all the buttery layers. I can't buy low gluten or spelt pastry; either it doesn't exist or it simply taste horrible.
On Thursday Lily will be at preschool for the day, so I can put a little bit more preparation and effort into the evening meal. I watched a little bit of Saturday Kitchen Best Bites at the weekend and Vivek Singh's roasted salmon in a mustard and dill marinade really intrigued me. Hopefully it works!
For Friday I plan on making a sausage and chickpea casserole, I will use the slow cooker and serve it with mash. How I miss regular potato mash! But 9/10 times I am too lazy to cook both kinds of potato. Double the work, double the pans and double the cleaning. I can't boil them together.
For the rest of the week I plan on just eating what we fancy. My meal plans are often just a rough guide rather than rules. Sometimes I may forget to take something out of the freezer the night before for example, so providing I have the ingredients I try to adapt recipes and whip something up.
