Meal Plan 11th-18th January

It is Meal Planning Monday. Did that week go quickly for you? I have almost finished my "Tasty Tuesdays" blog post for tomorrow, featuring photos of the meals we have enjoyed in the last week, so don't forget to have a read tomorrow and there will be a grocery shop vlog on my channel Sophie and Lily.
If you haven't read last week's meal plan, have a look here. You will notice it is quite Asian-inspired and the theme hasn't stopped this week either.

Today is Monday and we are going to enjoy a different version of a vegetable curry that featured on the menu last week.
Brown lentil, cauliflower, butternut squash and sweet potato curry with rice.

Pancetta, mushroom and buckwheat risotto.
After discovering Rob can tolerate buckwheat noodles I am going to see if he can tolerate the entire grain. Hopefully it tastes delicious. Buckwheat doesn't have an inspiring colour, so I shall try to brighten it up with some green vegetables.

Beef in oyster sauce, rice or rice noodles with stir-fried mixed vegetables

Teriyaki chicken with egg-fried brown rice and quinoa

Pan-fried cod with five-spice dressing with rice or rice noodles and mixed vegetables

Slow-cooked lamb shanks
I haven't elaborated on this meal idea because we will be out for the majority of the day, and the lamb shanks were a last minute purchase. I saw them by chance in Mark and Spencer and they were £3.50 for two meaty shanks instead of almost £8.00. Shame they became so expensive when cheap cuts of meat became so popular.

Korean beef bowl
Rob has been really enjoying this simple dish of Korean BBQ seasoned beef mince, rice and a combination of raw and cooked vegetables. I love the fact that it can be made in a matter of minutes, especially if I cook instant rice vermicelli noodles.

The next day will be Lily's 4th birthday, so I shall see what she would like to eat and treat her.

    1. Only started persevering with different meals like this since December. We got stuck in a rut of meat, veg, and sweet potatoes with everything! Give it a go, change is good :)
